Remember the old adage: "If you want something done right, do it yourself". Well, so, lets do it yourself, or at least as far as we can. I'm not expecting you to go out and buy a calf, raise it in the yard and butcher it on the table next fall, but there are things we can do it! The hardest part is figuring out where to start.

to the countryside, to produce a part, what we can do about it? A good way to start a small garden, just a few lines at the beginning or a few pots. You have to put a few watermelon plants around the children, so they will appreciate the effort and make watermelon their responsibilities. Grow your salads for the summer, tomatoes and greens, maybe a couple of cucumber plants. Spinach does not grow and where I live, but I found a Chinese cabbage! Everyone loves it and it will grow anywhere. Chinese, to grow in pots indoors on the stairs! It is dark green, leafy plant that turns out to be the best part of salads, and will take the place of spinach in any recipe. I ordered seeds from heirloom seed company and seed store at the end of the season. I am now growing in my kitchen window in the middle of winter in Colorado.
Another favorite turned out to be spaghetti squash. If you have room, you will love it and kids will, too! It is so easy to grow and just as easy to cook. You just cut it in half and take the seeds out. Do not forget to keep the seeds for next year. Place the squash face down in the microwave for 8 minutes and use a fork to scrape it out. oven does not work, and do not bleed in the series, such as microwave. It really does not take the place of spaghetti! It is necessary to taste anything put on it so you can just pour spaghetti sauce over it, add some grated cheese and, voila, you have dinner. How big is it?
I do not know about you, but I can not see myself canning vegetables all summer long. I just do not know enough about it and after all that work and expense, I'm afraid I'd end up with a bunch of spoiled tomato jars. My solution was a small freezer, cost $ 200 and lots of zip lock bags. It worked great, but remember to write on the bags that you put in them. I thought, since they were clear bags, I would be able to tell by looking. I've had some surprise dishes because of it.
the whole thing is to do what you can immediately add a little more as you learn. We can change our world in a week, but we can make changes at some time in our little corner of the world.
